Method

Preparation

Finely chop the shallots and cut the asparagus into pieces. Heat the stock in a separate pan.

Make the roux

Melt the butter in a soup pot. Add the shallots and gently sauté. Add the flour and whisk into a smooth roux. Let it cook gently for about 5 minutes.

Build the soup

Gradually add the hot stock while whisking continuously to prevent lumps. Add the asparagus pieces and simmer for 10–15 minutes until tender.

Finish

Season with salt and pepper. Cut the smoked salmon into pieces and add just before serving.

Serve

Ladle the soup into bowls and garnish with parsley and chives.
