Cake

  • 120 g oats (blended into flour)

  • 50 g almond flour

  • 4 eggs

  • 2 scoops (vegan) vanilla protein powder

  • 150 g low-fat quark

  • 2 tbsp maple syrup

  • 15 g baking powder

  • 1 tsp vanilla extract

  • 2 tsp cinnamon

  • Pinch of salt

  • 150 g grated carrot

  • 30 g walnuts, roughly chopped

  • 100 g low-fat quark

  • 50 g cream cheese

  • 10 g vanilla protein powder

  • Splash of vanilla extract

  • Extra walnuts for topping

Method – Healthy Carrot Cake

1. Oven & preparation

Preheat the oven to 175°C (347°F) and line a loaf tin with baking paper.

2. Make oat flour

Blend the oats in a food processor until finely ground.

3. Dry ingredients

Combine oat flour, almond flour, protein powder, baking powder, cinnamon, and salt.

4. Wet ingredients

Whisk the eggs for about 4 minutes until light and fluffy. Add quark, maple syrup, and vanilla.

5. Batter

Mix the wet and dry ingredients into a smooth batter.

6. Carrot & nuts

Fold in the grated carrot and walnuts.

7. Baking

Bake for approximately 40 minutes. Allow to cool completely.

8. Frosting

Mix all frosting ingredients until smooth and spread over the cooled cake.
