Ingredients for healthy chocolate bars

Base

  • 90 g rolled oats or oat flour

  • 1 scoop vanilla protein powder

  • Pinch of salt

  • 50 g cashew nuts

  • 4 tbsp honey

  • 5 tbsp cashew butter

  • 1Β½ tsp vanilla extract

  • 50 ml whole milk (optional)

  • 50 g dark chocolate, finely chopped

Chocolate topping

  • 120 g dark chocolate

  • 1 tsp coconut oil

  • Coarse sea salt (to taste)

Preparation (no-bake)

  1. Line a loaf tin with baking paper.

  2. Roughly chop 50 g of dark chocolate and set aside.

  3. Add oats (or oat flour), cashews, protein powder and a pinch of salt to a food processor. Blend into a fine, flour-like mixture.

  4. Gently heat the cashew butter and honey in a small saucepan over low heat until slightly runny.

  5. Remove from heat and stir in the vanilla extract and optional milk.

  6. Add the warm mixture to the dry ingredients and mix until a firm, sticky dough forms.

  7. Fold in the chopped chocolate.

  8. Press the mixture firmly into the loaf tin.

  9. Refrigerate for at least 1 hour until set.

  10. Melt the 120 g dark chocolate with the coconut oil using a bain-marie.

  11. Pour the melted chocolate over the base and immediately sprinkle with coarse sea salt.

  12. Return to the fridge until the topping has fully hardened.

  13. Cut into bars or squares.
