No-Bake Cookie Dough Bars with Date Caramel and Chocolate

By Roel van den Bogaard, personal trainer and founder of Aurora Personal Training in Eindhoven.

These cookie dough bars have three layers: a soft base with nut butter, almond flour and chocolate chips, a date caramel filling and a chocolate topping. The recipe makes 12 bars without an oven. Prefer to skip the protein powder? Replace the 35 grams of protein powder with an additional 35 grams of almond flour.

Enjoy a bar with coffee, as a sweet snack or as a homemade treat. Cashew butter gives the base a mild, creamy flavour. Peanut butter creates a more pronounced peanut taste.

Below is the complete recipe, with tips for neat layers, storage and freezing.

Ingredients for the cookie dough base

  • 190 g nut butter, preferably cashew butter; peanut butter also works
  • 100 g honey
  • 55 g butter, melted
  • 1 tsp vanilla extract
  • 110 g almond flour
  • 35 g vanilla protein powder
  • 50 g chocolate chips
  • A pinch of salt

Without protein powder: replace the 35 grams of protein powder with an additional 35 grams of almond flour. You will use 145 grams of almond flour in total.

Ingredients for the date caramel

  • 150 g pitted dates

Ingredients for the chocolate topping

  • 100 g chocolate

Original optional finishing touch: a small pinch of sea salt sprinkled over the chocolate before it sets.

Equipment

  • Small square or rectangular tin
  • Baking paper
  • Mixing bowl and spatula
  • Food processor
  • Sieve or colander
  • Heatproof bowl and saucepan, or a microwave-safe bowl
  • Sharp knife

Before you start

Use almond flour and other packaged ingredients that the manufacturer confirms are suitable for eating without further cooking.

This recipe contains no raw eggs or wheat flour. That does not automatically make every flour product suitable for eating uncooked. Follow the instructions on the packaging.

How to make cookie dough bars with date caramel

1. Combine the wet ingredients

Place the cashew butter, honey, melted butter and vanilla extract in a bowl. Mix until smooth.

If the oil has separated in your nut butter jar, stir it thoroughly before measuring.

2. Make the cookie dough

Add the almond flour, vanilla protein powder and a pinch of salt. Mix into a firm, slightly sticky dough.

For the version without protein powder, use the full 145 grams of almond flour.

Fold in the chocolate chips last. If the mixture is still warm from the melted butter, let it cool slightly first to help the chips keep their shape.

3. Press the base into the tin

Line the tin with baking paper. Leave some paper overhanging the sides so you can lift out the slab later.

Spread the dough across the base and press down firmly and evenly. Refrigerate while you prepare the date caramel.

4. Make the date caramel

Soak the pitted dates in hot water for 10 minutes, then drain thoroughly.

Check that all stones have been removed. Place the dates in a food processor and blend into a thick, sticky paste. Scrape down the sides and blend again as needed.

The soaking water is not part of the recipe.

5. Add the caramel layer

Spoon the date paste onto the chilled base and spread evenly.

Use the back of a lightly dampened spoon or a spatula to smooth the layer. Work gently to avoid pulling up the base.

6. Add the chocolate

Melt the 100 grams of chocolate using a double boiler or carefully in the microwave.

If using a microwave, heat in short intervals and stir between each one. When using a double boiler, prevent water from getting into the chocolate.

Spread the melted chocolate over the date caramel and smooth the surface. Add the optional small pinch of sea salt.

7. Chill and slice

Refrigerate until the base, date caramel and chocolate topping are sufficiently firm.

Lift the slab out of the tin and cut into 12 equal bars. For a smaller serving, cut each bar in half.

What are no-bake cookie dough bars?

These bars have a soft base that resembles unbaked cookie dough, flavoured with vanilla and chocolate chips.

They are not baked. Refrigeration helps the butter and nut butter base firm up, while the melted chocolate sets.

The date caramel is a paste made from soaked dates. It is not traditional caramel made by heating sugar, but provides a sweet, sticky middle layer.

Tips for the right texture

How do you stop the chocolate topping from cracking?

Let the chilled slab stand outside the refrigerator for a few minutes so the topping becomes slightly less brittle.

Use a large, sharp knife. You can briefly warm the blade under warm water, then dry it completely. Cut with steady pressure and wipe the knife between slices.

Why is the base too soft?

First check that the bars have chilled sufficiently and the quantities are correct. Nut butter consistency and the protein powder you use can affect the result.

Avoid immediately adding more dry ingredients, as this changes the original proportions.

Why is the date caramel not smooth?

Soak the dates for the full ten minutes and scrape down the processor bowl while blending. A small quantity can be difficult to process in a large machine; a smaller chopper may be more practical.

Why are the layers separating?

Press the base down firmly and spread the date caramel carefully. Wait until the entire slab is sufficiently firm before slicing.

Cashew butter or peanut butter?

Both are options in the original recipe.

Nut butter Flavour
Cashew butter Mild and creamy, allowing the vanilla and chocolate to stand out
Peanut butter A pronounced peanut flavour
Almond butter or mixed nut butter A different nut flavour; may affect firmness

Different products vary in consistency. Stir separated oil back into the nut butter before measuring.

Which chocolate should you use?

Use milk chocolate, dark chocolate or a combination. Dark chocolate creates more contrast with the sweet date layer; milk chocolate gives a sweeter flavour.

The original variation suggests mixing a little nut butter into the topping for a softer layer. This changes the basic recipe, texture and nutritional values.

Are these cookie dough bars healthy?

The bars contain ingredients such as nut butter, almond flour and dates. They also contain 100 grams of honey, butter and chocolate, making them an energy-dense sweet snack.

A portion can fit into a varied diet. Calling a recipe “healthy” does not mean you can eat unlimited amounts or that it is automatically healthier than every other bar.

Learn how the nutrients fit together in our guide to protein, carbohydrates and fats.

Are the bars sugar-free?

No. Honey is an added sugar source, and chocolate usually contains added sugar too. Dates contain naturally occurring sugars.

Using only dates in the caramel layer does not make the whole bar sugar-free.

Are the bars high in protein?

Nut butter, almond flour and protein powder provide protein. Whether the finished bars qualify as “high in protein” requires a calculation: at least 20% of their energy must come from protein.

We therefore avoid making that claim without a suitable nutritional calculation.

How many calories are in one bar?

Use the nutritional information for your actual ingredients. Add together the base, date caramel and topping, then divide by 12.

Calculate the protein powder version and the extra almond flour version separately. Include any additional nut butter used in the topping.

How to store and freeze cookie dough bars

Keep the bars covered in a sealed container in the refrigerator at approximately 4°C.

Two days is a cautious short-term guideline, following general advice for leftovers. This is not a tested shelf life for these particular bars. Follow any shorter storage instructions for your ingredients.

To keep portions for later, freeze them individually wrapped shortly after preparation. Place baking paper between pieces if needed and label them with the date.

Defrost a bar covered in the refrigerator.

Smell and taste cannot prove that food is safe. Discard bars with mould or other signs of spoilage, and do not taste them to test their safety. Food that smells normal can still be unsafe if stored incorrectly.

Frequently asked questions

Can you make these bars without protein powder?

Yes. Use 145 grams of almond flour instead of 110 grams of almond flour plus 35 grams of protein powder. This is the original substitution option.

Are the bars vegan?

No. The basic recipe contains honey and butter. Depending on the products, the protein powder and chocolate may also contain milk.

Are they gluten-free?

Not automatically. Check all ingredient labels and prevent cross-contact. The absence of wheat flour alone does not guarantee that the finished bars are gluten-free.

Which allergens does the recipe contain?

The recipe contains almonds and, when using cashew butter, cashews. Using peanut butter introduces peanuts.

Butter contains milk. Protein powder and chocolate may also contain milk, soya or other allergens.

Can cookie dough bars fit a weight-loss diet?

Yes, when the portion fits your overall food intake. Cut smaller pieces if you prefer a smaller serving. Making them yourself does not remove the importance of total energy intake.

Can you eat them after strength training?

Yes, but there is no required time to eat them. A bar is a snack, rather than an automatically complete recovery meal.
