LET’S MAKE IT
The ingredient list quantities change. Notes and instructions describe the original batch.
Whisk the vanilla protein powder with the water until smooth. Add the coconut milk and mix well. If using honey or maple syrup, stir it in now.
Stir thoroughly, including around the bottom and sides of the bowl, to distribute the seeds evenly.
Cover the bowl and refrigerate. After approximately 10 minutes, stir again to break up any clumps starting to form.
Divide the mixture between two jars and cover. Refrigerate for at least 4 hours in total, measured from when you first chilled the mixture. You can also leave it overnight.
Blend or mash 100 g mango into a purée and cut the remaining 100 g into small cubes. Do this just before serving, or store the prepared mango separately in a covered container in the fridge.
Divide the mango purée and mango cubes between the two servings. Sprinkle over the desiccated coconut just before eating.
For layers like those in the photo, spoon the set pudding and mango purée into your glasses in alternating layers.

The thickness depends on your coconut milk, protein powder and how long the chia seeds have to absorb liquid. Stirring a second time helps distribute the seeds evenly.
Coconut drinks sold in cartons are generally much thinner than canned coconut milk. Avoid a direct one-for-one substitution if you want the same creamy texture.
For the basic version with whey, mango and coconut rasps, without the optional honey or maple syrup, the calculation per portion is about:
| Nutritional value | Per serving |
|---|---|
| Energy | 365 kcal |
| Protein | 17 g |
| Carbohydrates | 15 g |
| Fat | 25 g |
| Of which saturated fat | 18 g |
| Fibre | 7 g |
This is an indication based on AH chia seeds, AH coconut milk with 17 g fat per 100 ml, Elvou vanille-whey, AH mango and AH desiccated coconut. Other brands, light coconut milk, extra toppings or any other portion size change the outcome. [1 to 5] Coconut milk delivers the creamy taste and a large part of the fat in this recipe. It can contain a lot of saturated fat. Therefore look at the portion and what you eat one day; the recipe itself does not cause fat loss. [6]
Store the pudding covered in the fridge at 4°C and use it within 2 days. This follows general storage guidance for prepared dishes. If an ingredient has a shorter remaining storage time, follow that instead. [7]
You can keep the mango separately and add the desiccated coconut just before eating for the best texture. Label your jars with the preparation date when making breakfast ahead.
Yes. Use 200 g mango and follow the packaging instructions for thawing and any required heating. If the mango is suitable for eating without cooking, thaw it in the fridge. Drain excess liquid before preparing the topping so the pudding does not become unnecessarily watery.
Yes, but the flavour, thickness and nutritional values will change. The powder adds vanilla flavour and can thicken the mixture.
For this variation, leave out the additional water initially and add water as needed after the pudding has set. The nutritional information above applies to the version with whey.
Replace the whey with a plant-based vanilla protein powder. If you want to sweeten the pudding, use maple syrup rather than honey.
Check the protein powder’s ingredients and adjust the water if needed, as plant-based powders can thicken differently.
No. Allow at least 4 hours of chilling for this recipe. Leaving it overnight is convenient when preparing breakfast for the following morning.
Before serving, check that the seeds are evenly distributed and the pudding has set sufficiently.
